With the school year starting, quick and healthy breakfast ideas are always useful. And this delicious combination of yogurt, fruit and pancakes is just perfect to start your day.
It's really quick to set together, as long as you make the mini pancakes ahead of time. We usually make a whole bath of pancakes on Sunday, store them in cooking tin or an air tight container once they cool down, and then just use them over the next few days.

To assemble this breakfast option just grab a bowl and combine one Greek yogurt (or any other yogurt, really), a few tablespoons of mini pancakes, and the fresh fruit of your choice (we usually prefer strawberries, but this works great too with blueberries, mango, banana, etc).
