Pancake Cereal {recipe}

Hello, and welcome! Have you seen the latest mini pancake/cereal pancake trend on Pinterest? To be honest, I hadn't, not until my daughter told me about it and said she wanted to try the mini pancakes.

So we decided to adapt our favorite Easy Cinnamon Pancakes recipe to create these tiny pancakes that apparently everyone is now eating as breakfast cereal... 

I didn't take a lot of photos of the process, but I'll try to describe it the best I can below. If you have any questions, let me know in the comments. 


Pancake Cereal {recipe}



Ingredients: 
  • 1 cup of whole wheat flour (all purpose flour works just fine, but since we're making the pancakes for breakfast, we're aiming for healthier alternatives)
  • 2 tablespoons of sugar 
  • 1 teaspoon of powdered cinnamon
  • 1 teaspoon of baking powder
  • 3/4 cup of milk
  • 2 tablespoons of softened butter 
  • 1 egg

Instructions:

Mix all ingredients together (no particular order needed, but I usually leave the flour and the baking powder to the end). Make sure there are no lumps in the batter. 

Heat a non-stick pan and then place small (tablespoon sized) portions of the batter on the pan. These will be your mini pancakes.

As soon as small bubbles form on the surface of the batter, turn the pancakes over, let them cook on the other side for a bit more and as soon as they are golden of both sides, remove them from the pan and let them cool down (if you have a cooing rack, this is the perfect time to use it).

Repeat the process until you've used up all the batter. This is the hardest part, as it's a lot more time consuming than when you're making regular sized pancakes). 

As soon as all your mini-pancakes are done and cooled down to room temperature, you can store them in a cooking tin or jar.
