Hello, and welcome! Cornmeal porridge is a delicious treat that, over time, I have come to make in a very similar way to the traditional Portuguese sweet rice dessert.
Ingredients:
- 1 liter or water
- 1 liter of milk
- 500 grams of cornmeal
- 5 tablespoons of sugar
- 3 egg yolks
- 1 cinnamon stick
- 1 - 2 bits of lemon peel
- powdered cinnamon to decorate (optional)
Place the water in a large pan, stir in the cornmeal, add the cinnamon stick and the lemon peel and bring to a boil. Then lower the heat and let it simmer, stirring frequently. Once a large part of the water has evaporated, add in the milk and repeat the process (don't forget to keep stirring).
As soon as the mixture starts to thicken again, add the sugar. Whisk the egg yolks, temper them and then mix everything together.
Remove from the heat, let it cool a bit and then place into containers for serving.
If you want, you can sprinkle with cinnamon powder before serving.
