Red pepper and cashews stir-fry

I love cooking with cashews, I always think they bring flavor and texture to a lot of otherwise ordinary dishes. So today I'm bringing you one of my favorites: a red pepper and cashews stir-fry.

Ingredients (for 2 - 3 servings):
  • 1 red bell pepper, cut into thin slices
  • 1 large onion, also sliced
  • 1 cup of cashews
  • 3 tablespoons of olive oil
  • salt and pepper to taste


Heat the olive oil in a non-stick pan and add the onion. 

Once the onion turns soft and golden, add the red pepper: 

Season with salt and pepper and mix together. Let cook for a few minutes and add the cashews before turning off the heat.

Remove from the heat and serve while still warm.
