I love cooking with cashews, I always think they bring flavor and texture to a lot of otherwise ordinary dishes. So today I'm bringing you one of my favorites: a red pepper and cashews stir-fry.
Ingredients (for 2 - 3 servings):
- 1 red bell pepper, cut into thin slices
- 1 large onion, also sliced
- 1 cup of cashews
- 3 tablespoons of olive oil
- salt and pepper to taste
Heat the olive oil in a non-stick pan and add the onion.
Once the onion turns soft and golden, add the red pepper:
Remove from the heat and serve while still warm.
