I love baking cookies, but I usually have problems with most recipes. They either require some time in the fridge before I can use cookie cutters successfully (or, rather, my kids can, as they are the ones who love to cut the cookies to shape) or they just turn out too dry and hard.
Finally I managed to perfect a recipe that doesn't require any fridge time - which means it's easier, quicker and less messier. My kids are happy, and so am I.

Ingredients:
- 150 grams of sugar
- 500 grams of flour
- 1 egg
- 100 milliliters of milk
- 2 teaspoons of cinnamon
- 1 teaspoon of baking powder
Mix the sugar with the egg and the milk. Add the cinnamon and the baking powder, and then the flour. As you add the flour, the dough will become thicker. At some point, it will be easier to use your hands to blend everything together.
Roll the dough over a floured flat surface until it's about 1/2 centimeters high.
Use cookie cutters to cut your cookies (if you don't have cookie cutters, just roll small balls of dough with your hands and then flatten them to form the cookies).
As you can see, my kids tend to get creative with their cookie shapes:
Place on a cooking sheet and bake at 160ยบ for about 15 minutes.
Once the cookies have cooled down, you can store them in an airtight box or tin for several weeks.
Enjoy, and happy Thursday!
