Red pepper and shrimp stir fry

If you've been visiting for a while, you already know I'm a fan of quick and easy recipes - and stir frying vegetables is a great way to get healthy meals.in next to nothing. As I also love virtually anything with shrimp in it, so I decided to combine both flavors.

Scroll down to find out how I make it:

Ingredients (for 2 servings):

  • 1 large onion, peeled and sliced
  • 1 large red pepper (remove the seeds and cut into thin slices)
  • 2 tablespoons of olive oil
  • 1 cup of peeled shrimp
  • salt and pepper to taste

Instructions:

Heat the olive oil in a pan and add in the onion and the red pepper. Stir until the onion is soft and golden-ish.

Then add the mushrooms and keep stirring the mixture for about 5 minutes or so.
