If you've been visiting for a while, you already know I'm a fan of quick and easy recipes - and stir frying vegetables is a great way to get healthy meals.in next to nothing. As I also love virtually anything with shrimp in it, so I decided to combine both flavors.

Ingredients (for 2 servings):
- 1 large onion, peeled and sliced
- 1 large red pepper (remove the seeds and cut into thin slices)
- 2 tablespoons of olive oil
- 1 cup of peeled shrimp
- salt and pepper to taste
Instructions:
Then add the mushrooms and keep stirring the mixture for about 5 minutes or so.
Season with salt and pepper, stir it one last time and it's ready to serve!
