Spinach & mushrooms stir fry

I love to stir fry vegetables for quick and healthy meals. This spinach-mushroom combination is one of my favorite when I need an easy to cook lunch or dinner.

Ingredients (for 2 servings):

  • 1 large onion, peeled and sliced
  • 2 - 3 handfuls of spinach leaves
  • 2 tablespoons of olive oil
  • 1 cup of laminated mushrooms
  • salt and pepper to taste

Instructions:  

Heat the olive oil in a pan and add in the onion and the mushrooms. Stir until the onion is soft and golden-ish. Then start adding the spinach leaves.

At first you'll have a huge heap of spinach leaves, but as you mix them with the other ingredients they will become soft and decrease in size:

Season with salt and pepper, stir it one last time and it's ready. The whole process takes only a couple of minutes and you'll have something deliciously healthy to serve.
