Hello, and welcome! Today I'm sharing here a cake that we bake a lot at our house. It's one of my husband's favorites and it's great for when you want something tasty but not overly sweet or heavy.
Ingredients:
- 1 and 1/2 cups of flour
- 3/4 cup + 1 tablespoon of brown sugar
- 1/4 cup of butter (softened)
- 2 eggs
- 4 or 5 apples
- 1 teaspoon of baking powder
- 1 tablespoon + 1 teaspoon of powdered cinnamon
Instructions:
Mix the eggs with the 3/4 cup of sugar and the butter.
Peel and run one of the apples through a food processor or a grater and add the shredded bits of apple to to the batter. Mix in one teaspoon of cinnamon and the flour and the baking powder.
Pour the batter into a pre-greased round cake pan and then peel and slice the remaining apples, spreading them over the batter in a circular pattern:
Sprinkle the remaining tablepoons of sugar and cinnamon all over the sliced apples:
Bake at 180ÂșC for approximately 45 minutes.
Side note: it's absolutely delicious served still slightly warm from the oven, together with a scoop of vanilla ice cream or a dollop of whipped cream.

Enjoy, and happy Wednesday,
