Hello, and welcome! We are in September already, which means that apple season is upon us. So today I'm sharing here the recipe for our favorite apple pie!
Ingredients:
For the filling:
- about 800 grams of peeled apples, cut into small cubes
- 180 grams of sugar (brown sugar is our favorite for this)
- juice of one lemon
- 1 - 2 table spoons of cinnamon (depending on your taste; we love cinnamon so we usually go for the two tablespoons)
- 250 grams of butter (or vegetable margarine, if you want to keep your pie dairy free)
- 400 grams of wheat flour
- 110 grams of cornstarch
- 4 table spoons of sugar
- 1 egg (to brush over the crust before placing the pie in the oven, for an extra golden look)
- your favorite ice cream, to serve together with the pie
Instructions:
Start with the filling. Place the cut apples in a large bowl, add the lemon juice, the sugar and the cinnamon and mix everything together. Let it rest while you take care of the crust.
In another bowl, mix all pie crust ingredients together until you have an even ball of dough (using your hands is the easiest way to do this).
If you want to cover the pie with crisscrossing strips of crust, separate a small amount of dough (usually a ball of dough roughly the size of the palm of your hand is sufficient).
Spread the remaining dough in an even layer over the bottom and sides of a greased pie mold (I prefer to use one with a removable bottom, as it makes serving much easier), pinch the dough with a fork here and there, and then spread the filling over the dough (take care to remove any extra liquid).
Using a rolling pin, flatten the extra dough you saved up and cut long, thin strips to create a pattern over the pie. Press to join the dough at the sides and cut off any excess.
Whisk the egg in a bowl and brush it over the exposed pieces of crust.
Place the pie in the oven and bake until the crust turns a pretty, golden color.
Serve while still warm, with a scoop of your favorite ice cream on the side.
Any leftovers can be easily refrigerated for a couple of days and then heated in the microwave before serving.
