While some may argue that it's too cold for ice cream, my daughter fiercely disagrees - according to her, no matter the weather outside, it's always a good time to have ice cream.
And in the case of this particular ice cream I may have to agree, because it's a bit like comfort food - sweet, tasty and just a little decadent.
And the best? It's very easy to make and requires only three ingredients!
Ingredients:
- one can of condensed milk (the light or low fat version works fine)
- 200 ml of cream
- 1 pack (about 200 grams) of butter cookies (or any other sort of tea cookies)
Instructions:
Crumble the cookies. I usually do this by placing them in a zip-lock bag and and then running the rolling pin over the bag until I get the desired crumble size, but you can use a food processor too.
In a bowl, whip the cream until it's soft and fluffy, add the condensed milk and finally the crumbled cookies.
