These days I'm eating less and less meat. I still love meat and I'm not planning on turning a full time vegetarian (at least not for now) but as I get older I just don't feel the need to eat as much meat as I used to. In exchange, I'm trying to increase my intake of vegetables, and these sweet potato burgers are the perfect excuse for that.
Ingredients (for 5 to 6 burgers):
- 1 cup of sweet potato (boiled and smashed)
- 1 cup of spinach leaves
- 1 onion
- 1 egg
- 2 slices of day-old bread
- 1 teaspoon of garlic powder
- 1 table spoon of olive oil
- salt and pepper to taste
Instructions:
Boil and smash the sweet potato first.
In a bowl, combine all ingredients together (except the olive oil). Use your hands to blend everything.
Heat the olive oil in a non stick pan. Create the burger shapes by separating portions of the mixture, rolling then into a ball and then flattening then before placing in the pan.
Cook on both sides until the burgers turn a nice golden color.
Serve while still warm.
