Chocolate mousse with chocolate chips

Chocolate over chocolate is my daughter's definition of heaven. And while this chocolate loaded mouse isn't something I make very often along the year, it is definitely a staple at our house during the festive season. Because, of course, holiday calories don't count.

Ingredients (for 6 portions):

  • 200 grams of culinary chocolate (I usually prefer the ones that have a higher content of cocoa)
  • 6 eggs
  • 8 tablespoons of sugar
  • 1 tablespoon of butter
  • 1 cup of chocolate chips (I used dark chocolate chips here, but any will do)

Instructions:  

Melt the chocolate and the butter in the microwave in 10-15 second increments. making sure they are well mixed once fully melted. Add the sugar and then finally the eggs (make sure the chocolate has cooled down a bit first or mix small portions of the chocolate with the eggs first). You now have a chocolate mousse.

Add 3/4 cup of chocolate chips to the chocolate mousse and pour it into containers that can be placed in the freezer. Freeze for about 10 minutes and then place the chocolate chips mousse back in the fridge.

The freezer part is optional. If you put the mousse directly in the fridge it will solidify just as well, but the solidification process takes longer and the chocolate chips will tend to concentrate in the bottom of the containers. That first quick freeze prevents that and you will have well spread chocolate chips across your mousse.

Once the mousse is completely solid, spread the remaining chocolate chips on top and serve.
