These salmon burgers are very easy to make (and they need to be, because I rarely have time to cook anything complicated) and a healthy alternative too. Even my picky kids love them - which, believe, me, is a huge bonus.

Ingredients (for 5 to 6 burgers):
- 2 salmon fillets (as shown below)
- 1 medium onion
- 1 slice of bread (you can use fresh bread, but this recipe is great to use bread leftovers if you have them around)
- 1egg
- 1 tablespoon of olive oil
- 1 tablespoon of lemon juice
- salt and pepper to taste
Instructions:
Run the bread and the onion through the food processor and add them to the salmon, together with the egg.
Season with salt and pepper and mix everything together.
In a non-stick pan, heat the olive oil. Using your hands, separate the mixture into portions and shape them into burgers.
Cook until they are golden-brown on both sides.
We love them with rice (wild rice would be great, but my kids won't eat it) or mashed potatoes and a salad, but these salmon burgers are very versatile, so you can serve them with almost any side dish of your choice.
