Almond oats apple crumble

Fall is already well under way, and this is the perfect season to cook and bake with apples. This almond oats apple crumble is an interest twist on more traditional apple crumble recipes and so easy to make there is no reason not to try it out.

Ingredients:

  • 6 large apples, peeled and cut to pieces
  • 1 cup of yellow sugar for the crumble + 2 table spoons to mix with the apples
  • 2 tablespoons of butter
  • 1 cup of oat flakes
  • 1 cup of almond flour
  • 3/4 cup of sliced almonds
  • 2 teaspoons of powdered cinnamon
  • juice and zest of one lemon

Instructions:  

Mix the apples with two tablespoons of yellow sugar, 1 teaspoon of powdered cinnamon and the lemon juice and zest.

In another bowl, mix the rest of the ingredients to make the crumble - almonds, oats, butter, and the remaining teaspoon of powdered cinnamon. At this stage I find it easier to use my hands to make sure the butter is well incorporated.

Place the apple mix at the bottom of an oven tray and spread the crumble mix on top.

Place in the oven for about fifteen minutes, until the crumble top turns a nice golden color.

I like to eat it still slightly warm from the oven, or cold and accompanied with a scoop of vanilla ice cream.
