I love anything with lemon. And if it's sweet, simple and easy to make, all the better. These lemon tea cookies have all those qualities. And more than that - they are delicious!
Find out how to make them below:
Ingredients:
- 1/2 cup of sugar
- 1 egg
- 1/2 cup of butter or vegetable margarine, melted
- 1 cup of flour
- 1 teaspoon of baking powder
- the juice of one large lemon
Instructions:
Mix all ingredients together (no special order needed).
Place the mix on a piping bag with a star tip and start shaping your cookies. Traditionally in Portugal this type of cookies is shaped into an "S", but to be honest I prefer to have them round, with the start tip to add a bit of flair (my daughter helped making this batch, so some of the cookies ended with odd shapes instead, though)
If you don't have a piping bag or don't want to use one, refrigerate the mix for one hour and then you can use cookie cutters easily.
Place your cookies on a greased oven tray and bake at 180ยบ C for about 15 minutes.
Remove from the oven and enjoy (with or without tea).
Wow what an easy recipe! The lemon sounds yummy. Thank you for sharing on Merry Monday! Hope to see ya next week!
