Meatloaf is one of those dishes that I cook on a weekly basis. It's easy to make, the kids love it and I can whip one up on Sunday evening and have enough leftovers for one or two additional meals.
I cook meatloaf with all kinds of meat, but for some reason the chicken meatloaf is a favorite of ours.
Ingredients (serves 6):
- 4 chicken breasts
- 1 chorizo (can be replaced with bacon or smoked ham if you prefer)
- 1/4 of a loaf of bread - it works better with bread leftovers from the previous day
- 4 large eggs
- 2 table spoons of olive oil
- 1 large onion
- two teaspoons of garlic power (optional)
- a pinch of salt
Instructions:
Hard boil three of the eggs.
Ground the meat, half of the chorizo, the bread and the onion. Place everything in a bowl, mix in the remaining egg and the garlic powder.
Season with salt and use your hands to blend everything together.
Spread the mixture as evenly as possible on an oven tray. Peel the hard boiled eggs and place then in the middle of the spread mixture.
Fold over the meat mixture over the eggs until they are totally hidden within.
Slice the rest of the chorizo and spread over the meatloaf, sprinkle with the olive oil and place in the oven at 200ºC for about an hour.
Remove from the oven when the crust is golden brown and let it cool for just a bit before serving.
When you cut the meatloaf slices, you will find the eggs inside. This is my kids' favorite part of the meal...
Not to mention it's delicious too, and a great comfort food for the cold weather.
