These tuna rolls are very quick and easy to make and are delicious as part of your breakfast, as a mid-morning snack or as a starter. Add a salad and you also have a healthy summer meal.
Here's the how to:
Ingredients (for four rolls)
- four squares of puff pastry (mine are usually about 15x15 cm but size will depend on how big or how small you want the finished rolls to be)
- 1 large onion
- 2 cans of tuna
- 1 red pepper
- salt and pepper to taste
- 1-2 tablespoons of olive oil
- Mince the onion and the red pepper and mix them together
- Mix in the tuna and spread over each square of puff pastry
- Sprinkle with olive oil, season with salt and pepper and fold over the puff pastry to create the rolls. Place them in a slightly greased oven tray and sprinkle a bit more olive oil on top
- Bake for about 20 minutes until the puff pastry turns a nice golden color
- Serve the rolls hot or cold, and enjoy!
