This is a lovely cake indeed. It's easy to make and turns out beautiful every time. And because I love anything with lemon, it's one of my favorites.
The darker spots effect adds a bit of flair to an otherwise very simple cake, and it's achieved with a "partial" crumble. Let me explain it to you below.
Ingredients for the cake:
- 1 1/2 cups of flour
- 1 egg
- 1 large lemon (zest + juice)
- 3/4 cup of sugar
- 2 tablespoons of butter
- 2 teaspoons of baking powder
- 1 Greek yogurt
- 1/2 cup of flour
- 1/4 cup of sugar
- 2 tablespoons of butter
I used a 24 x 24 cm cake pan, because I like this cake more on the thin side, so these quantities only allow for the "partial" crumble I mentioned before. If you want a full crumble with a similar sized cake pan, just double the amounts.
- Mix all ingredients of the cake together. I'm a practical girl, so I don't bother a lot with a specific order in which to add the ingredients, though out of habit for this cake I usually start with the egg and the sugar and end with the lemon zest and the lemon juice.
- Line a cake pan with a sheet of greased parchment paper and pour the cake batter into it
- In a separate bowl, mix the ingredients for the crumble until you have, literally, small crumbs of butter covered in flour and sugar
- Spread little clumps of the crumble here and there over the cake batter (if you're going for a full crumble, spread it evenly over the batter)
- Bake at 200ยบ C for about 30 minutes until it turns a nice golden color.
- Cut into squares and serve.
In this recipe I have tried to adjust amounts to cups instead of grams, to make it easier for everyone, since in previous posts I had a few people asking about conversions. Hopefully this time it will work for everyone, but if you still have questions, just let me know.
