The weekend is almost here and since the weather is turning gray, I'm betting we are going to stay indoors again, which usually leads me to a marathon of cooking. And what better thing to cook in a rainy fall afternoon than a pie?
Pies are my fall comfort food and there are literally zillion recipes around. I have selected eight of my favorite recipes to share here. Four are desserts and the other four are mostly vegetable pies, because I just love them!
So, here are 8 Delicious Pie Recipes that you need to try this fall!
I selected recipes based on the difficulty level (easy is always the best for me) and the type of ingredients. When I cook, I like to cook from scratch, so recipes that mostly call for canned or pre-prepared ingredients are usually a no-go. If I'm just using those, I may as well buy a ready made frozen pie and put it in the microwave.
Let's leave desert for the end and start with the other ones:
The Double Crust Chicken Pot Pie from Sally's Baking Addiction. I love pot pies because they usually allow me to use food leftovers in an elegant way, but this double crust pie is awesome just by itself!
Zucchini and sweet corn are two of my favorite ingredients when making a pie or a quiche, so I had to include the Sweet Corn and Zucchini Pie from Pinch of Yum here! It's a no crust pie, so this one is all about the filling.
Number three is the Southern Tomato Pie with Bacon over at The McCallum's Shamrock Patch. Honestly, I'm not sure I can wait the 25 minutes the recipe suggests to let the pie cool down before serving. This looks just delicious!
And the last of the non-sweet pies is the Vegetable Ricotta Pie recipe from Pickled Plum. Doesn't it look incredibly fall-ish?
Onto the the desserts now! The first one is the amazing Great Pumpkin Pie recipe also from Sally's Baking Addiction. Even though pumpkin pie is not one of my favorites, this one is so pretty I could not pass it up!
The Pear Pie Crumble Bars from Crazy for Crust. I love pears and I love anything crumble, so this is the perfect combination. It just shows that pies can be made in all shapes and sizes.
The Lemon Cheesecake Pie over at Scattered Thoughts of a Crafty Mom. Because I can't resist anything with lemon in it. And as a bonus, at the bottom of Jamie's post there is a list with several other recipes using lemon, including a few lemon pastas I definitely need to try.
And, last but not least, these lovely Rosette Apple Pie Tartlets from Hello Paper Moon. The instructions are a bit flimsy but I think I'll be able to nail it down. And if mine end up half as pretty as these, I'll be happy!
