This is just the perfect spring cake. You can mix in other berries too, but our family seems to prefer the simplest version, made with fresh strawberries and delicious all on its own.
Here's the how to:
Ingredients:
- 1 cup of flour
- 3/4 cup of sugar for the cake + three tablespoons for the strawberry filing
- 4 eggs
- 3/4 cup of fresh strawberries, sliced (you can use frozen too)
- 1/2 cup of butter, softened
- 1 greek yogurt
- 2 teaspoons of baking powder
- 2 tablespoons of cornstarch
- 2 tablespoons of water
- 1 tablespoon of lemon juice
Instructions:
First take care of the strawberry filling. In a pan, bring the water and the lemon juice to a boil, add the three tablespoons of sugar and the cornstarch and mix until they dissolve.
Add the strawberries and turn off the heat when the water has partly evaporated. Let it cool, while you prepare the cake.
For the cake, mix the sugar with the eggs, add the butter and the greek yogurt and then finally mix in the baking powder and the flour.
Place half the cake mixture in a greased cake mold:
Add the strawberry filling, swirling it a bit if you want:
And then pour the rest of the cake mix on top:
Place in the oven and bake at 180ยบ C for about 25 minutes.
Remove from the oven, let it cool a bit, and enjoy!
