Only 3 ingredients and 71 calories per bar. Could they be any healthier?
I tend to eat a lot of energy bars, I usually take them as snacks to eat at the office or after the gym. Recently I decided to start making my own bars instead of keep buying new packages every weekend.
Because it's spring and there are lots of strawberries around, it's the perfect time to make these strawberry oats energy bars.
Here's the how to:
Ingredients (for 6 bars):
- 1 cup of strawberries, sliced
- 1 1/2 cups of oats
- 1 tablespoon of cornstarch
- powdered cinnamon (optional)
- 5 tablespoons of water
Instructions:
In a pan, bring the water to a boil and add the strawberries. Slowly, mix in the cornstarch. Let the mixture simmer for three or four minutes, mixing it occasionally.
Remove from the heat, let it cool for a couple of minutes and add the oats.
Place the mixture into bar molds, light pressing to create a uniform surface.
If you don't have bar molds use a regular oven tray and spread the mixture evenly, you can cut it to shape later.
Place in the oven for about 15 minutes at 160ÂșC. By the end of this time your bars will hold their shape but still feel slightly soft when you bit them. If you prefer the bars to be cruncher, add another 5 minutes in the oven.
Leave the bars on a cooling rack and if you want you can sprinkle them with a bit of powdered cinnamon.
When the bars are cold you can store them in a box or a zip lock bag.
Eat well and enjoy spring!
