Zucchini breakfast bites

I usually make these for breakfast, but they really work well for a snack between meals or as part of a healthy lunch.

The first inspiration for these zucchini bites came from the book below, which is filled with amazing French recipes. I own the Portuguese version, but you can find the English one here: Cooking School Provence

The difference is that the zucchini beignets in the original recipe were fried and I rarely fry anything at our house, so I needed to adjust ingredients and amounts to have the oven baked zucchini bites instead.

Here's my alternative recipe:

Ingredients: 
  • 1 onion, diced
  • 1 large zucchini, diced
  • 4 tablespoons of olive oil
  • 2 large eggs
  • 1 cup of milk
  • 1 cup of flour
  • 1 teaspoon of powdered garlic
  • salt and pepper to taste for seasoning


Instructions:
  • Put the onion, the zucchini and the olive oil together in a bowl

  • In a different bowl, mix the flour, the eggs and the milk

  • Combine the contents of both bowls and add the garlic powder and the seasoning. Pour the batter over greased muffin or cupcake tins and place in the oven at about 180ยบ C for 20-25 minutes until cooked

Remove from the oven, let the "muffins" cool for a few minutes and serve while still slightly warm
