These crunchy baked asparagus are delicious, easy to prepare and make a healthy side dish.
Ingredients:
- Asparagus (I usually bake about 9-10 asparagus, but it's very easy to adjust amounts if you want to make more, or less)
- 1 egg
- olive oil
- about 100 grams of bread crumbs
- two teaspoons of garlic powder
- one teaspoon of fine herbs
- salt to taste
- olive oil
Instructions:
- Whisk the egg onto a bowl. In a second bowl, mix the bread crumbs, the garlic powder and the fine herbs
- Wash the asparagus and remove the edge of the stems, closer to the root. Run each individual asparagus through the egg, and them through the bread crumb mix
- Place in an oven tray, add the salt and sprinkle with olive oil
- Bake for about 20 minutes or until the bread crumbs have turned a nice golden color.
Serve while it's still warm, for extra crunchiness.
