Oven baked doughnuts

Hello, I hope you've had a wonderful Easter!

We were visiting family in the last few days and then the kids had a doctor appointment this morning anyway, I took the day off to go with them and then we came back home to rest and play a little (school only starts tomorrow after the Easter break).

Once back from the doctor we decided to make doughnuts and even though I had something else planned to post today, I decided to share the recipe here instead.


Both my kids love doughnuts, but I'm not comfortable with all the sugar and fat store bought doughnuts usually pack, so a while ago I searched for a healthier replacement that could be oven baked. After several tests, we seem to have an official recipe.

Ingredients: 
2 cups of flour
3/4 cup of sugar
2 teaspoons of baking powder
3/4 cup of milk
2 eggs
2 tablespoons of butter (or vegetable margarine, if you prefer)
2 teaspoon of powdered cinnamon (optional)

And that's it. No further instructions required. Just mix everything together and then pour into the molds.

I bought a doughnuts mold to make the cakes really look like doughnuts. But if you don't have one, just use any other kind of small molds (cupcake molds work great, we've used them before too). In my molds this recipe makes about 20 doughnuts.


Bake in the oven at 160ยบ celsius for about 15 minutes and them check if they are already fully baked. Don't leave them for too long, otherwise they will be too dry. You want them soft and fluffy.


My kids eat them just like this, but if you want to add the sugar on top, just melt a bit of butter, dip the baked doughnuts in it and then cover them in sugar (or a mix of sugar and cinnamon, we like that version too).

Or cover them in chocolate or strawberry glaze and enjoy!
