This is the cake I made last month for my mother's birthday and it turned out so well I decided to share it here. It just took me a while to actually get round to it, but here it is.
To make this cake, you need:
- 250 grams of sugar
- 125 grams of butter
- 250 grams of flour
- 3 eggs
- 1 plain greek yoghurt
- 2 teaspoons of baking powder
- strawberry jam for the filling (or any other jam that you like)
- sugar paste, fondant or icing for decoration (optional)
Instructions:
The easiest possible: just mix everything (except the strawberry jam and whatever you choose for decoration) until all ingredients are blended together. I do this in no particular order and I've never noticed a difference in how the cake turns out, to be honest. Pour into a greased cake mold and bake at 170ÂșC for about 35 minutes.
Because I didn't need a very large cake, I divided it in half, spread the strawberry jam on one of the halves, stacked the other on top, and then covered everything with the sugar paste. If you need a larger cake, double the recipe and divide the mix between two equal molds before baking.
Oh, and in case you're wondering, the flowers I used to decorate the cake were make using cookie cutters, just because I'm practical that way...
It's a very simple and quick to make cake, perfect for a last minute party or for when you just don't have time for complicated recipes but need something that everyone will love!
