Simple Zucchini Quiche

Quiches are one of my favorite foods to cook when I need to prepare meals to take to the office. They are also helpful as a side dish at parties or even if you have friends over for dinner. There are zillions of food combinations you can put in quiche, but this zucchini quiche has got to be one of the easiest to make. And it looks really pretty too.

Ingredients:

  • 2 cups of flour (all purpose or whole wheat, whichever you prefer)
  • 1/2 cup of vegetable margarine (100% vegetable if you want to keep it dairy free; if not, you can replace by butter)
  • 4 large eggs
  • water (to add as needed)
  • a pinch of salt
  • 1 large zucchini, or two smaller ones

Instructions:

In a bowl, combine the flour, the margarine and one egg to make the crust. Slowly add water and mix (use your hands) until you have something that looks like this:

Spread the crust dough over the bottom and the sides of a pie mold. Cut the zucchini into thin slices and spread them over the crust, creating a pattern:

In another bowl, whisk the remaining three eggs and pour them as evenly as possible over the zucchini slices. Season with salt and bake for about 25 minutes until the crust starts to look golden-ish. Serve hot or cold, according to your preference.
